  • ¼ cup olive oil
  • 1 Clove garlic
  • Refined Flour 1 tbsp
  • 1 slice of bread
  • 1 tbsp lemon juice
  • 1 tbsp coriander leaves
  • 1 tbsp mint leaves
  • 1 tsp green chilies, chopped
  • 2 slices cheese
  • 2 slices tomato
  • 1 red capsicum
  • 1 yellow capsicum
  • 1 green capsicum

For The Rice:

  • 1 1/3 cup Basmati Rice Grains
  • 2 2/3 cups Water
  • 1 tbs Olive Oil
  • 4 tbs Butter
  • 2 tsp Finely Chopped Garlic
  • 1 tsp Sliced Jalapeno Pepper
  • 3/4 cup Sliced Zucchini
  • 1/4 cup Sweet Corn Kernels
  • 1 tsp Fresh Black Pepper Powder
  • 2 tsp Finely Chopped Celery Stalks
  • 1 tsp Chopped Parsley Leaves
  • To Taste Salt


  1. Grind the mint leaves, coriander leaves, garlic and lemon juice. Add salt, red chili powder and olive oil to make a paste. 
  2. Cut the cottage cheese into thick slabs and sprinkle salt and red chili powder on each side. 
  3. Spread the paste on the cottage cheese. 
  4. Sprinkle some flour over the paste so that it sticks to the paneer steaks. 
  5. Drizzle some olive oil to grill them. 
  6. Add a dash of chili powder and salt to the chopped capsicums. 
  7. Sauté the capsicums for a few minutes. 
  8. Add chopped garlic and olive oil to the pan. Then, add zucchini slices and sauté them. 
  9. Add jalapeno peppers and corn to the pan. 
  10.  Once the vegetables are sautéed, add chopped parsley and seasonings to the mixture. 
  11.  Add the rice and toss it will. 
  12. Serve the sauteed vegetables and rice with a paneer steak and serve immediately.

Kofta or Meatballs is a delectable recipe that you must try out. This is an authentic kofta recipe with the perfect blend of spices. The succulent koftas just melt in your mouth. The spices infused in them will make you feel hungrier. 

What is A Kofta? 

A kofta is a meatball. You can enjoy it with a delicious curry, that is made with onions, tomatoes and yogurt. You can also bake your koftas without the curry. 

How to Make the Best Koftas? 

First of all, fry the onions until they are golden brown. Then, add some water to the pot and mash the onions into a smooth paste. If you want, you can transfer the golden-brown onions to a blender to grind them. Once the onion paste is ready, add the ginger garlic paste and oil. Once these ingredients form a smooth waste, it’s time to add the onion paste, yogurt and seasonings. Cook the mixture for some time and add water if required. 

Then, mix all the seasonings with the beef. Once the beef mixture is ready, start rolling the koftas into golf ball-sized meatball. When you are rolling the meatball mixture into balls, use your fingers. Do not use a spoon or spatula as that can turn the mixture into an overworked meat paste. If the meatball mixture is sticking to your hands, you can grease your hands. In this way, the mixture won’t stick. Also, make sure that the meatballs are of the same size so that they cook evenly. If you are not sure about the size, you can use a cookie scoop to make sure that they are of the same size. If you don’t have a cookie scoop, you can pat the meatball mixture in a tray and cut it into even squares. Then, roll each square into a ball. 

If you feel that the meatball mixture is getting too dry or tough, you can add a bit of milk with the breadcrumbs and add it to the mixture. This will keep the meatballs moist and soft.  

Traditionally, koftas are deep-fried before transferring them to the curry. But, to keep this recipe healthy, I have skipped that step. If you want to add some extra flavor to the meatballs, consider browning them in the oven. To brown the meatballs, use a dark baking sheet and place the meatballs in the oven for 10 minutes.

Garnish with green chilies and fresh coriander. If you want your koftas without the curry, you can simply bake the koftas.

Another tip is that you shouldn’t spoon the koftas to move them around when they are cooking. Otherwise, they will fall apart. If you want to move them, you can rotate the pot gently.

Baba ghanouj or baba ganoush is a simple plate prepared with hummus and falafel. It is a dish from the Middle East that is quite simple and quick to prepare.

At the base, this dish is none other than a mashed eggplant (eggplant caviar) to which is added tahini (sesame puree), olive oil, lemon juice, and garlic. Sometimes the flavor is more pronounced because the eggplant will have a taste of smoke if we choose to grill it unlike the roasted in the oven aubergines which will have a sweeter taste. 

The Origins Of This Dish: 

It can be found throughout the Middle East, as well as in some Mediterranean countries like Greece, but according to them, this dish would originate from Lebanon.

baba in Arabic means father, which can be interpreted by the father of vegetables probably from the important place that occupies the eggplant, and ghanouj means soft. Eggplants can be roasted in the oven, but if you prefer a smoky taste, you can also grill the eggplants. Serve, simply drizzle with a dash of olive oil or try adding one of the garnishes parsley, cumin, and paprika.

  • 1 large eggplant.

  • Preheat the oven to 375°F (190°C).

  • Turn the eggplant over and scrape the pulp with a spoon.
  • Mash in a blender or with a fork and purée.
  • Drizzle the pulp with half the lemon juice.
  • Add the tahini and stir. Season with cayenne pepper and cumin.
  • Add the garlic and olive oil. Mix well.
  • Pour the second half of the lemon juice
  • Adjust the seasoning. Serve with olive oil and lemon.

El Hummus Recipe:


  • 250 gr cooked drained chickpeas.
  • 1 clove of garlic.
  • 50 ml sesame oil.
  • 1/2 lemon juice.
  • 1 pinch salt.
  • 1 teaspoon olive oil.
  • 1 pinch of cumin.
  • 1 pinch of paprika.


  • Add the chickpeas, lemon juice, salt, sesame oil, and peeled garlic clove to the chopper.
